- 1 cup light brown sugar
- 1 cup sugar
- 1/4 tsp salt
- 2/3 cups evaporated milk
- 1 tbs butter or margarine
- 1 tsp vanilla
- 2 cups pecan halves
- 1 cup sugar
Using five-quart microwave-safe casserole, mix sugars, salt and milk well. Cook on high 7-9 minutes or until mixture reaches soft ball stage, stirring well every three minutes. Beat slightly, add butter and vanilla. Stir well. Add pecans. Stir well and drop by teaspoon onto foil (sprayed with cooking spray) or waxed paper. Let cool. If mixture starts to set before finished dropping, reheat at 50 percent power for 30-45 seconds or until it can be stirred. Continue until finished.
Yield: 3-4 dozen small.
