Apple Pie with Homemade Crust

4 med apples (delicious)
1 cup granulated sugar
Water to cover apples
1 tsp corn starch
1/2 cup brown sugar
1 tbs margarine
1 tsp cinnamon

Par apples and cut in very small pieces. Cover apples with water and sugar. Cook until tender. Add corn starch dissolved in 1 tsp cold water. Place apples in uncooked pie shelf (fills 9 inch pie pan). Sprinkle with brown sugar mixed with cinnamon. Dot with margarine. Cover with uncooked pie crust. Press the two together. Sprinkle top of crust lightly with granulated sugar. Prick top with a fork several times. Bake 400F oven until brown on top (about 20-30 minutes).

Pie Crust:
1-1/2 cups all purpose flour
1/4 tsp salt
1 tbs granulated sugar
8 tbs Crisco shortening (not liquid)
5 tbs ice water

Mix four, salt, and sugar. Add shortening. Cut into flour using pastry cutter or 2 table knives until a course granular or crumble mixture is formed. Add ice water. Form dough into a ball. Chill in wax paper about 20 minutes. Divide into 2 parts, 1 a trifle larger. Roll larger one on a lightly floured board to 1/4 inch thickness. Place in bottom of pie pan. Do the same for top crust. Press together after filling has been poured into pie pan.
